D.O.: D.O. Toro
Mariano García, who directed the vineyards of Vega Sicilia in 30 harvests (1968-1997), was its creator and continues to be his alma mater, now with his sons Alberto and Eduardo. The first one directs the commercial and management tasks, and the second, manages the vineyard and the production, a tandem also shared in their other Mauro winery, in Ribera del Duero. Apart from the time he spent in Vega Sicilia, Mariano García has a long experience in oenology. He is a partner and founder of Aalto along with Javier Zaccagnini, and an adviser in the groups Masaveu, Enate or Astrales, among others. Here, they produced from 2001 to 2012, but they recently concluded their oenological advise. The Gastronomy Academy awarded this prolific oenologist, who has signed some of the largest wines in Spain, the 2012 National Gastronomy Award for "An entire lifetime" dedicated to this sector. Both wineries also belong to the association Grandes Pagos de España, an association of winegrowing farms throughout Spain that defend and disseminate the culture of "vinos de pago", produced on specific terroir and that reflect the unmistakable personality of its soil, subsoil and its climate. Since 2000, a group of producers of "vinos de pago" (wines made with their own grapes from a single vineyard) from the two Castillas, came together to claim the unique personality that defines the wines from the best farms and extend their culture, which has barely resurfaced, throughout Spain, founding Grandes Pagos de Castilla. In 2003, this non-profit association was transformed into Grandes Pagos de España to give an answer to the interest of many colleagues from other areas in making known and promoting this other concept of quality.
History of the winery
Bodegas Mauro expanded its area of action and its winegrowing activities to the lands of Toro in 1997.Here, it began to produce a wine called Viña San Román, which was produced in its first vintage in the facilities of Bodegas Mauro. Therefore, it was not able to bear the denomination of origin Toro. After 1998, the wines were already made in Maurodos and registered under D.O. Toro. The winery is located in the surroundings of Villaester, in the municipality of Pedrosa del Rey, province of Valladolid. The technical part of Bodegas Maurodos is entirely run by the son of Mariano, Eduardo, who trained in Bordeaux. He worked in excellent wineries in different areas of California and Burgundy, and his winemaking philosophy is to guarantee maximum respect for the grape and the land, apart from minimising the stabilisation processes of the ageing.
From its beginnings, the winery chose to cultivate on soils with boulders and sand in San Román de Hornija and Villaester to create a new project in these lands of Toro. Their aim was to extract the large potential of the soil and the particular expression of a historic area of red wines. In the municipalities of Villaester and San Román de Hornija, it has different vineyard farms with a total surface area of around 100 hectares planted mainly with the variety Tinta de Toro. Here, some of its older vines were planted without rootstock because this area was not affected by phylloxera. The vineyards are 35 years old on average, with a low plantation density that has, however, been increased in the new plantations to generate competition between roots and regulate the vigour of the plant. The soils are loose, stony or sandy, depending on the type of plot, and with clay subsoils where the plant can supply itself with water in drought periods.
The varieties and plots are separately vinified in deposits of different materials and capacities, to observe the evolution of the grapes, and to respect the features of the different farms. The ageing is carried out in French and American barrels. 20% of them are renewed each year and they last between one and two years, depending on the vintage and the type of wine.
Wines from Bodegas Maurodos

San Román is made exclusively with grapes of the Tinta de Toro variety, from old vineyards cultivated on rocky and clayey-sandy soils in San Román de Hornija, Villaester, Morales de Toro, Villafranca de Duero and El Pego. This wine is aged for 24 months in French and American oak barrels. It is a wine that synthesizes the best of the Maurodos vineyards, which are cultivated using organic methods. It is a very expressive wine on the nose, with a marked mineral character, balsamic aromas and notes of graphite. In the mouth, it is ample, succulent, with nerve and a very good persistence.
Prima is made from 85% Tinta de Toro and 15% Grenache from the youngest vineyards planted on clayey-sandy soils. It is aged for 12 months in French and American oak barrels. This wine has a good aromatic intensity, with marked fruit, soft tannins and a suitably-measured ageing that provides complexity and depth in the mouth. With ripe fruity notes, spices, a mineral touch, and a long and pleasant finish.
