Williams Colección de Añadas Amontillado en Rama is a generous wine made with the native Palomino Fino variety by the Williams & Humbert winery.
Williams & Humbert’s origins date back to 1877, and it is currently considered the winery with the largest barrel stock in Europe. Located between Jerez de la Frontera, El Puerto de Santa María and Sanlúcar de Barrameda, it stands out for applying the winery’s Vintage Ageing System in its productions: a technique that consists of selecting free-run musts from old vines, keeping them static without adding wine from any other harvest and waiting for the biological ageing to develop spontaneously.
The vineyards with which Williams Colección de Añadas Amontillado en Rama is produced have an age of between 20 and 60 years; sprouting grape and late ripening strains that develop very well in albariza soil and an Atlantic climate.
Williams Colección de Añadas Amontillado en Rama comes from selecting free-run musts with a controlled fermentation at 17-22ºC, giving rise spontaneously to the biological ageing of the velo de flor. 8 years later a second fortification, at 18º, is carried out, leading to the start of 6 years of oxidative ageing.

Sherry and wines from Jerez are probably Spain’s biggest contribution to the world of wine. Unique and special, there is nothing else like them in the world. A great diversity of Sherry wine is produced in DO Jerez-Sherry-Manzanilla de Sanlúcar, everything from sweet wines to fortified wines. Sweet wines are divided between Pedro Ximénez and Moscatel, depending on the variety used during production. Concerning fortified wines, there is a large range including Finos, Amontillado, Manzanilla, Oloroso, Medium, Cream and Palo Cortado, classified depending on the result of the ageing process under the ´velo flor´. A unique trait of these wines is the ageing process using the Solera Method, a system using various barrels from different vintages. The system uses stacked barrels, where a portion of a barrel’s contents is extracted and mixed with the lower barrel, with the barrel then filled with the contents of the upper barrel. Thus, the new wine is gradually coming to be thanks to the age of the rest of the content of screeds.
