Characteristics of Werlitsch Ex Vero II
Werlitsch Ex Vero II is a white wine coupage made with predominantly Sauvignon Blanc, accompanied by a minimum amount of Chardonnay and produced by Weingut Werlitsch in Südsteiermark, Styria, Austria.
Werlitsch Ex Vero II is made with grapes from vineyards cultivated according to the principles of biodynamic agriculture. When the grapes reach the winery, they are squeezed and remain in contact with their skins for a few days. Following skin-contact maceration, the grapes are pressed to begin fermentation spontaneously in large open wooden tanks. The resulting wine is aged on its fine lees in large barrels for two years and bottled without adding sulphites. It rests there for another year before going on sale.
The Ex Vero range of wines is this winery’s main range and each one is named according to the vineyards it comes form, in this case the Ex Vero II comes from plots located on a steep slope.
