Characteristics of Viridiana
Viridiana is a red wine from the Ribera del Duero D.O region produced by the Dominio de Atauta winery. This wine is made using only Tempranillo (100%) grapes.
The grapes used to make Viridiana come from vineyards aged between 20 and 30 years old that are planted at almost 900 metres above sea level, with a mixed soil containing sands and clay.
The region is home to a continental climate with strong Mediterranean influences. The winters are long and cold, whereas the summers are rather short.
Once the grapes are harvested and transported to the winery, the first phase of fermentation takes place in stainless steel tanks in controlled temperatures of 26-28ºC.
The must then undergoes maolactic fermentation, again in tanks. Before being bottled and marketed, Viridiana is aged for 3 months in French oak barrels.
The Dominio de Atauta winery is located in the province of Soria. The winey, founded in 2000, is located at nearly 1000 metres above sea level and works on over 600 plots where they grow grapes for their products.
