Viñas Serranas Ciclon is a barrel-aged red wine made by Viñas Serranas in the Sierra de Salamanca (Castilla y León) with the Rufete, Calabrés and Rufete Blanco native varieties.
Viñas Serranas was set up by César Ruiz, one of the founders of the La Tintorería wine shop in Madrid, together with Bosi Jiménez, Miquel Udina and Alberto Martín. The four combine their wisdom and passion to reveal the diversity and potential of the Sierra de Francia, a mountain range in Salamanca where they cultivate small plots with old vines from the early twentieth century.
Viñas Serranas Ciclon comes from vineyards located in 7 towns within the Sierra de Salamanca. These are old strains lying 650 metres above sea level with predominantly sandstone and quartzite soils. Work in the vineyard is fully organic and ecological and the harvest is carried out early and manually in 20 kg boxes.
The Viñas Serranas Ciclon grapes are placed whole in small 2,500-litre tanks to macerate and ferment with native yeasts. Afterwards, a large part of the wine is aged in used 500-litre French oak barrels with the rest in stainless steel tanks for 10 months.
Viñas Serranas Ciclon is a declaration of the potential that exists in the Sierra de Salamanca. A place whose native varieties have the ability to express the most elegant fruit and freshness.
