Viña Mayor Verdejo is a wine that is produced with Verdejo and a small percentage of Sauvignon Blanc, both from vineyards that are over 60 years old. They are harvested at night to take advantage of the lower temperatures and preserve all their aromatic potential. Once the harvest arrives at the winery, and after it goes through a soft stomping process, it ferments in stainless steel deposits at a low temperature. Here, the harvest is left for 2 months on its fine lees.
