Characteristics of Viña Mayor Toro Vendimia Seleccionada
Viña Mayor Toro Vendimia Seleccionada is a red wine produced by the Viña Mayor winery in the D.O. Toro. This wine is made exclusively with the Tinta de Toro winery.
The grapes used for Viña Mayor Toro Vendimia Seleccionada come from old vines which are over 40 years old. Following the harvest, the grapes are selected before being placed into small deposits. The vinification process begins with a mild destemming and a partial bleeding phase, a procedure through which the liquid is separated from solid waste.
The must obtained passes through a stage of pre-fermentative maceration at a controlled temperature of around 8º, which lasts for 5 days. Before the ageing process, Viña Mayor Toro Vendimia Seleccionada undergoes malolactic fermentation in the barrel.
Finally the wine aged for 6 months in second or third use French oak barrels, during which Bâtonnage of the fine lees takes place. Viña Mayor Toro Vendimia Seleccionada is then aged for another 6 months in the bottle before being placed on the market.
Viña Mayor boasts a successful history of over 20 years. The winery currently produces in three different wine making regions: Rueda, Ribera del Duero and Toro.
