Characteristics of Vía de la Plata Chardonnay Brut
Vía de la Plata Chardonnay Brut is a cava made from 100% Chardonnay produced by Bodegas Vías de la Plata in Extremadura, particularly in the municipality of Almendralejo, named in 1983 as one of the International Wine Cities due to its deeply rooted wine culture and vineyards. The grapes are pressed three times and undergo fermentation between 12-18ºC. Afterwards, it undergoes three rackings. The second fermentation takes place in the bottle. These three methods are called "tirage". One of the objectives is to provide yeast to its stay the bottle. This solution rests for 6 to 8 days, after which it is filtered. This cava is a sparkling that is sweet and rounded. It undergoes an aging of 15 to 25 months.
