Vagüera is a white wine without denomination of origin produced by Alvar de Dios Hernández in El Pego (Toro).
After working in several different wineries, Alvar de Dios decided to start his own personal project, demonstrating the value of the old vines owned by his grandfather in the town of El Pego. His clear effort towards an organic-biodynamic cultivation and a classic production, result in fine and tasty wines. Alvar de Dios has managed to position himself amongst the most important winemakers of the area.
Vagüera is a white wine made mainly with Albillo and another 15 varieties, in co-plantation of a small vineyard located in the municipality of El Maderal (Zamora), outside D.O. Toro. This vineyard, of around 500 vines, was planted over 90 years ago on red clay soils at an altitude of 900 metres.
Once the grapes are manually harvested, an without separating the varieties, they go through a short cold maceration for 12-18 hours. The grapes are gently pressed and the resulting must goes through a cold, static settling process. The fermentation is carried out in used 300-litre barrels with native yeasts. Here, the wine rests for a year before it is bottled.
