Characteristics of UBE Carrascal
UBE Carrascal is a white wine produced by the winery Cota 45 in Sanlúcar de Barrameda (Jeréz), V.T. de Cádiz.
Cota 45 is the project of Ramiro Ibáñez, a prestigious oenologist from Jeréz who works as an adviser in different wineries of the Sherry Triangle (Marco de Jeréz).
The winery Cota 45 is located in an old boat workshop in Bajo de Guía, a magical beach of Sanlúcar de Barrameda. Here, Ramiro Ibáñez makes his wines, younger ones, with shorter ageing, with recovered native varieties and experimenting with the different "albariza" soils (typical of Jeréz, calcareous and with very good water retention).
With Cota 45, Ramiro seeks to make manzanilla as they did in the olden days, without fortification and with shorter ageing, bringing all the focus on the terroir and the personality of each farm. With all the expression of the grapes marked by the soils, the climate and the vintage, and with the ageing only present to the necessary extent, to complement and boost the character of the terroir.
UBE Carrascal is a wine made with three kinds of Palomino Fino grapes (Palomino Fino, Palomino de Jeréz and Palomino Pelusón) from a single vineyard in the farm Pago de Carrascal, Las Vegas, located quite close to the Atlantic ocean in Sanlúcar de Barrameda. Here, they still preserve the original Palomino variety.
After fermenting in Sherry butts, it is aged for 20 months in selected butts with a slight presence of the yeast cap (velo flor).
UBE Carrascal is a juicy, intense and dry wine. The aromas of ripe white fruit and quince stand out. With marked salty notes in the mouth, it is austere and very mineral, a very long wine with great longevity. Limited production of 1000 bottles.
