Terre de Giumara Inzolia is a single-variety Inzolia white wine produced by the Caruso e Minini winery in the I.G.P. Terre Siciliane , in Sicily, Italy.
The grapes used to make the Terre de Giumara Inzolia wine are taken to the winery and destemmed before undergoing a cold maceration (cryomaceration) in stainless steel tanks at a temperature of 4ºC from 4am to 12 noon. Then the grapes are gently pressed and the must is statically cleared to begin alcoholic fermentation, which takes place at a controlled temperature for around 20 days. The resulting wine ages for 4 months in stainless steel tanks before being bottled.
The grapes for these wines come from the Guimarella and Cutaja vineyards, where mainly native varieties are cultivated and where the white grapes lie on exceptional plots on hills, 450 metres above sea level.
