Characteristics of Tantum Ergo Brut Nature

Tantum Ergo Brut Nature is a cava produced by the winery Bodegas Hispano Suizas, in the municipality of Requena, in the Valencian Community interior. Manual grape harvest, in which only the healthiest grapes are selected. During the grape harvest and the wine-making, the temperatures are low in order to preserve the primary aromas. The fermentation takes place in American oak barrels, and once completed the first fermentation, the cava will be kept on its own lees, thus obtaining more unctuosity and bulkiness. The second fermentation in the bottle is prolonged for at least 22 months until its manual disgorging.

Tasting notes Tantum Ergo Brut Nature

Sight Intense golden yellow colour with an abundant and thin bubble that slowly rises until forming a slight bubble collar in the edge of the glass. Nose Very intense primary aromas. Subtle touches of its aging on its lees, toasted hints and nuances of pastries. Flora nuances and dried fruits in a slight vanilla background. Taste Powerful and creamy cava with a well-integrated acidity and carbonic acid gas. Citric and pastry aromas stand out at the retro-olfaction. Slightly bitter finish which makes it persistent. A very complex and pleasant cava.

Subtle touches of its ageing on the lees, touches of toasted hints and pastry. Floral nuances and dried fruits with a slight vanilla background. Taste Tantum Ergo Brut Mature 2009 is a powerful and fleshy cava with very integrated acidity and carbonic acid gas. Citric aromas and aromas of pastry stand out at retro-olfaction. Slightly bitter finish which makes it persistent. A complex and very pleasant cava.

Winery Hispano-Suizas

Cava was born under the constant shadow of its French counterpart, Champagne. However, produced over 1,200km away and a gap of over 100 years, Cava was always going to be a completely different product, even if produced using the same method and and sometimes with the same varieties. Firstly the climate and soil have a profound impact on the yields, while the plant strains that thrive here and completely different to those in the Champagne region. Fortunately, as more winemakers are becoming convinced of this, they are producing Cavas with their own personality, showing off the art of the second fermentation in the bottle like no other wine region in the world.
