Characteristics of -SO2
SO2 is a white wine from Costers del Segre produced by Castell d'Encús cellar. The winery is located in Talarn (Lleida).
SO2 is made from Sauvignon Blanc and Semillon, the latter, little known in the Spanish wine trade, is originally from Bordeaux. The grapes come from vineyards planted 850-1000 metres above sea level on limestone franc soils low in organic matter.
The harvest is carried out manually in small boxes of 10kg. For processing, a portion of the wine is fermented in stone and the rest in oak barrels and stainless steel tanks.
After vinification SO2 spends 10 months aging in barrels. The wine will not have antioxidants or sulfites added to it.

When we refer to the DO Costers del Segre we think of wines with a continental character, which in some respects is true, but extensive replantation of international grape varieties means that the majority of wines produced here lack a geographical or territorial trademark, even though the vast majority of the wines are technologically perfect. However, there are currently wineries such as Mas Blanch i Jové, Costers del Sio, L’Olivera, Lagravera and Thomas Cusiné, among others, who concentrate their effors on producing wines with what are considered varieties native to the region. However, the majority of this region is still dominated by classic international varieties.
It is located in the Pyrenees area of Pallars Jussà (Lleida) in a mountainous area at an altitude of 800 to 1000 meters. The orientation is primarily SO with good protection from the cold north winds. The intention of the winery is producing a limited number of bottles from the whole fruit of their vines.
