Characteristics of Selección "La Aguilera"
Cair is a red wine produced by D.O. Ribera del Duero by Bodegas Dominio de Cair. The winery Dominio de Cair was built by the Luis Cañas family in La Aguilera, after they searched for the perfect place to settle in Ribera in order to produce the best quality wine.
Cair is a single variety Tinto Fino grown from old vines, some of them are centuries old. It is a vineyard with a low yield but it is treated with the greatest respect from the Cañas family. The grapes are harvested by hand and are transported to the winery in small crates that ensure they are kept in perfect condition. Once at the winery, there is a double selection. First the bunches in order to select only the best grapes. The aging takes place for 14 months in new French and American oak barrels for 14 months.
Cair have a short life but full of expectations. Its first vintage was awarded Best Wine of High Expression at the Envero awards (2011), and the second for the Best Crianza also in Envero awards (2012) or the best wine in the Ribera del Duero in the prestigious International Wine Challenge competition.

The 2015 vintage started with a winter that had good groundwater reserves. The spring was warm and dry until well into the month of June, when there were intense rainfall at the beginning of the blooming. A summer with some well spread out storms gave way to a very dry autumn.
The harvest was slightly ahead of the usual dates, but the analytical and organoleptic features, and the balance of the berries, were ideal. Thus enabled the harvest to take place at the optimal ripening time.
The wines from this vintage, which was classified as excellent, have a good colour intensity, significant fruity notes on the nose and a high tannic potential in the mouth, with sweet tannins that indicate the good phenolic ripening of the berries. A vintage reminiscent of the exceptional 2005 vintage.
After the withering in a mild winter, the warm start of spring brought sprouting forward by almost 10 days. The summer, which was quite cool and dry, enabled the good evolution of the growth cycle and a balanced ripening. This was a vintage without setbacks. Worth mentioning is the high production of this vintage due to good climatic behaviour during the harvest.
The wines from this vintage have great colour intensity, and a high fruity expression on the nose and in the mouth. Their balance and tannic potential stand out; these features show us the great potential to produce great wines for ageing, and for lighter and fruitier productions.
Cair 2013 is a complex, meaty and expressive red wine. This vintage is ripe on the nose, with aromas of red and black fruit, and with roasted notes, tobacco and coffee on the nose. On the palate it is direct, silky and very lingering.
Regarding climate, the 2012 vintage started with the sprouting of the vines in the beginning of spring with the cooler temperatures. In May, generous rainfall and high temperatures gave way to a generalised drought throughout the summer. Luckily, the rains started at the onset of the ripening. The precipitations at the beginning of October, and the nice temperatures during the harvest, resulted in the a uniform phenolic ripening. The wines from this vintage have a good alcoholic strength, balanced by moderate levels of acidity, with a good colour and phenolic intensity, and a suitable level of tannins, all important features for a perfect ageing.
After a predictable winter, the weather changed in spring. Temperatures were higher than normal, which caused an early start of the grapes’ ripening cycle. The normal course of the climate at the end of spring and at the beginning of the summer, allowed the vines to recover their usual pace, and the veraison took place on the expected dates. The beginning of the harvest was slightly early due to the strong heat the grapes suffered during their ripening. However, the nice weather throughout the harvest, without rain or frost, provided grapes with an impeccable health. Wines from the 2011 vintage have a slightly higher alcohol strength than usual, with a perfect balance thanks to their natural acidity, concentration of colour and phenolic richness. For all these reasons, this vintage has been classified as excellent, offering high-quality young wines, and wines with the ideal features for their ageing.

Dominio de Cair is the result of the curious personality of the winemaker from Rioja Juan Luis Cañas in the Burgos area of Ribera del Duero. This project was born from his passion for the vineyard in 2008, and it finally became a reality with the creation of the winery in 2012. Here, everything has been designed for what is truly important: optimal conditions and an extraordinary raw material to create wines of an exceptional quality. In such a short time, these wines have already won important prizes and mentions, both at a national and an international level.
