SantYuste Paraje Vallejo is a natural white wine made from the Verdejo variety in jars by Esmeralda Garcia in Santyuste, Segovia (Castilla y León).
Esmeralda García is a young winemaker who, having trained in different wineries, returned to her homeland to set up her own project. She makes natural wines that capture the spirit of a town, Santiuste de San Juan Bautista, and of the generations of farmers who went before her. She starts from a point of absolute respect for the sandy soils that have allowed the pre-phylloxera Verdejo vines to survive, and she uses these to make white wines with great strength and concentration.
SantYuste Paraje Vallejo comes from a location within the town that lies at 800 metres above sea level. These are very old vines, aged between 130 and 180 years old, that have survived over time thanks to the gravel and boulder soil and protection from the surrounding houses themselves. They are cultivated using environmentally friendly agriculture and no chemical products. The harvest is carried out manually when the grapes reach optimum ripeness.
In the winery, the SantYuste Paraje Vallejo grapes are partially destemmed and undergo a light skin-contact maceration for a few hours. They are then directly pressed in a vertical press and the resulting must then undergoes alcoholic fermentation in earthenware jars from La Mancha. It remains there with its lees for 6 months. The wine is not stabilised or filtered and is bottled without adding sulphites.
SantYuste Paraje Vallejo is the result of a respect for the land and tradition. A white wine made without intervention that showcases the local star variety, which is almost certainly a red grape with a white colour. Verdejo in its purest form.
