Azienda Cerbaiola is a small winery located in Montalcino (Tuscany) where three generations have fully dedicated themselves to masterfully working the vineyards. These are traditional and very low production wines that have won awards nationally and internationally vintage after vintage.
Salvioni Rosso di Montalcino comes from three plots located 420-440 metres above sea level. These are strains aged between 10 and 25 years old and planted in pebble soils. The team use organic agriculture and no synthetic products. The harvest is carried out manually at the optimum point of ripeness.
In the winery, the Salvioni Rosso di Montalcino grapes ferment in 35-40hl stainless steel tanks for about 28-30 days with native yeasts. There are frequent pump overs and no temperature control. The wine is then aged in large 18-22hl. medium-toasted Slavic oak barrels for 12 months and is finally released for sale after a short period of bottle aging.
