Characteristics of Safrà

Safrà is a red wine produced by the winery Celler del Roure in Moixent, D.O. Valencia.

Celler del Roure is a family-run winery that was created in 1996, with 20 hectares of vineyards owned by them. They soon acquired 40 hectares more in Serra Grossa, in the region of Les Alcusses. All their vineyards are cultivated organically, and they have their certification since the 2016 harvest.

Since 2009, the current owner of Celler del Roure, Pablo Calatayud, an agronomist training engineer, has focused on recovering varieties native to the area, such as Mandó or Arco, and return to the old vinifications in clay jars (tinajas) that were so commonly used in the Mediterranean area. His goal is to complement their line of wines, where we can find the widely known Maduresa and Les Alcusses.

Safrà is a wine made with Mandó, Red Grenache and Monastrell, from vineyards located at 550 metres of altitude on loamy-sandy soils.

The grapes are manually harvested and placed in 15-kg boxes. Once the harvest arrives at the winery, it ferments in stainless steel deposits and old stone wine presses, with native yeasts and with 30% of whole bunches. The macerations are soft and at low temperature. The malolactic fermentation takes place in clay jars (tinajas). Here, the wine ages for 6 months.

Tasting notes Safrà

Safrà 2017 is a juicy wine that is concentrated and persistent. In this vintage the aromas of ripe red fruit stand out on the nose, together with notes of aromatic herbs. On the palate it is deep yet lively, with a lingering and long-lasting finish.

Celler del Roure is a small family winery of D.O. Valencia, a winery in constant search for territorial identity. The recovery of native varieties that were almost extinct, like the Mandó and the Arco, of which some farms with old vines have been recovered, or the production of wine in clay jars, an ancient tradition in the Mediterranean area.
