Rovellats Premier Brut Nature is a cava produced by Rovellats, a winery with the most tradition in Penedes. This cava is a coupage of Macabeo and Parellada that undergoes its first fermentation at 13 ºC in stainless steel deposits and the second, instead, has the cavas situated 12 meters deep, also at a temperature of 13 ºC. Cava was born under the constant shadow of its French counterpart, Champagne. However, produced over 1,200km away and a gap of over 100 years, Cava was always going to be a completely different product, even if produced using the same method and and sometimes with the same varieties.
