Characteristics of Rosa Cusiné

 Rosa Cusiné is a rosé cava from the D.O Cava region produced by Parés Baltà. It is made using Grenache (100%) grapes.

After being harvested, the grapes used to make this cava ferment in stainless steel tanks for 14 days at 16ºC. After this process, the must rests on its lees for three months. During this period there are daily battonages. Then following traditional methods, a second fermentation is then carried out in the bottle. Before being put onto the market, Rosa Cusiné then ages for at least 26 months in the bottle.

The origins of the Parés Baltà winery go back to the late eighteenth century, dating back to 1790 when the first vines were planted. The wines and cavas produced buy the company are held in high regard and are known for their quality.

Tasting notes Rosa Cusiné

Sight Pale pink colour with salmon-coloured reflections. Clean and bright, it shows a thin bubble. Nose It is a cava which has fine and delicate aromas in which notes of ripe red fruits, pleasant notes of fresh herbs, balsamic reminiscences and dried fruits stand out. Taste In the mouth, it has a good attack, and an energetic and elegant mid-palate marked by its carbonic acid gas, perfectly integrated and very well structured. Long and persistent finish which leaves reminiscences of red fruits at retro-olfaction.
Sight Pale pink colour with salmon coloured reflections. Clean and bright, fine bubbles. Nose This cava exudes fine and delicate aromas. Notes of ripe red fruit, and nice notes of fresh herbs, balsamic nuances and dried fruit. Taste Good attack, energetic and elegant on the palate. Perfectly integrated fizziness, very well structured. Long and persistent finish leaving nuances of red fruits lingering at retro-olfaction.
Sight Elegant with fine pale pink salmon with soft salmon pink reflectiions. Its very thin bubbles form a delicate crown cap on the surface. Nose An explosion of well-balanced flavours with good intensity. Many notes of candied fruit mixed with creamy notes and nuts. Taste Cava with a very nice and friendly attack and a good mid palate with notes of ripe and candied fruit wrapped in very creamy aromas. Its great acidity provides it with a good freshness. It shows a perfectly integrated fizziness and a good long finish.  A very refined and elegant cava.

Winery Parés Baltà

Cava was born under the constant shadow of its French counterpart, Champagne. However, produced over 1,200km away and a gap of over 100 years, Cava was always going to be a completely different product, even if produced using the same method and and sometimes with the same varieties. Firstly the climate and soil have a profound impact on the yields, while the plant strains that thrive here and completely different to those in the Champagne region. Fortunately, as more winemakers are becoming convinced of this, they are producing Cavas with their own personality, showing off the art of the second fermentation in the bottle like no other wine region in the world.
