The city of Zacapa is found at 229 metres above sea level. In 1976, to celebrate their one hundred-year anniversary, this leader in rum production decided to create <strong>Ron Zacapa Centenario</strong> to pay tribute to their hometown.
Unlike other rums which are produced using molasses as a base, <strong>Zacapa</strong> uses only the concentrated first pressing of the sugar cane, known as virgin sugar cane honey, to impart a sweeter, smoother flavour.</p><p>When it's time to start fermentation, they introduce their own strain of yeast extracted from pineapples. This yeast produces the precise aromatic compounds Zacapa requires, and so they ferment the rum slowly, to give the yeast the time it needs to work. The distillation process is minutely controlled by Zacapa's experts. They use a specially designed single column still, lined with copper.</p><p><strong>Ron Zacapa</strong> ages in an impressive location, at 2300m above sea level, in the house known as The House Above the Clouds. There, they use a solera system in which they blend rums of various ages in casks. Every drop of rum passes through each type of cask, allowing each one to share its aromas and flavours with the maturing liquid, resultign in the perfect combination of flavours and aromas, sweetness, spices and fruit.<br></p>Guatemala-0001-11-30
