Characteristics of Roger Goulart Brut Reserva

Roger Goulart Brut Reserva is a cava made by Caves Roger Goulart in the municipality of Sant Esteve Sesrovires (Barcelona), D.O. Cava.

Caves Roger Goulart is a winery specializing in the production of long-aged cavas, whose origin goes back to 1882. In this year, Magí Canals i Farré excavated Cava Sant Jordi in the garden of his house, where he would later begin to produce cava using the traditional champagne method.

Caves Roger Goulart prepares its cavas with delicacy and thoroughness; selecting the best grapes strictly from the best production areas, with the optimum levels of acidity in order obtain very fresh base wines. These wines, preserved in the best conditions, will be fundamental for carrying out the second fermentation and its subsequent aging.

Roger Goulart Brut Reserva is a cava made with Xarel·lo, Macabeo and Parellada grapes from vineyards located in the Penedés area.

Each variety is prepared separately. Before pressing, the grapes are refrigerated to prevent the loss of aromas. The pressing is gentle, removing only a 50% yield. After racking, the must ferments at a controlled temperature of 16-18°C, with selected yeasts. After the fermentation the coupages are carried out in order to perform the tirages. After the second fermentation and a minimum aging of 18 months, when the disgorging is performed, the expedition liqueur is added, leaving the sugar level at approximately 8 grams/liter.

Winery Roger Goulart

Cava was born under the constant shadow of its French counterpart, Champagne. However, produced over 1,200km away and a gap of over 100 years, Cava was always going to be a completely different product, even if produced using the same method and and sometimes with the same varieties. Firstly the climate and soil have a profound impact on the yields, while the plant strains that thrive here and completely different to those in the Champagne region. Fortunately, as more winemakers are becoming convinced of this, they are producing Cavas with their own personality, showing off the art of the second fermentation in the bottle like no other wine region in the world.
