René Bouvier Gevrey-Chambertin La Justice is a Pinot Noir variety red wine produced by René Bouvier in the AOC Gevrey-Chambertin.
René Bouvier is a family estate created in 1910 by the grandfather of Bernard Bouvier, current company winemaker along with his wife. The estate has 13 hectares of the Pinot Noir variety and 4 of the Chardonnay variety, which are part of a total of 18 denominations in Burgundy, Cotes-de-Nuits-Villages, Fixin, Marsannay and Gevrey-Chambertin, including Premiers and Grands Crus. A long way from commercial winemaking, this 100% ecocert winemaker prefers to bring out the expression of vintages and terroirs, rejecting a standardisation of wines and leaving wood in the background.
As an anecdote, the name René Bouvier Gevrey-Chambertin La Justice comes from the fact that in the Middle Ages the lord of the land held trials in this town. This wine specifically comes from 2 hectares located in the northeast of the Gevrey-Chambertin denomination. Strains of about 40 years old planted in clay-limestone, stony and well drained soils, and cultivated organically using organic and biodynamic techniques. The grape is manually harvested and selected.
Once classified, the grape is destemmed and vinified. Alcoholic fermentation is carried out at a controlled temperature over 20 days. Yeasts are native and there are no additives. The wine is aged for 18 months in barrels, 30% of which are new.
René Bouvier Gevrey-Chambertin La Justice is an elegant red wine that perfectly reflects the fine expression of Gevrey-Chambertin. This wine is ready to drink straight away, but it can also be kept for another decade.
