René Bouvier Aligoté Vieilles Vignes is a white wine made by René Bouvier with the Aligoté variety in the AOC Bourgogne Aligoté.
The founder's grandson, Bernard Bouvier, is the one who runs the René Bouvier estate today. One of the certain Côte de Nuits values that you find today among the leaders of the new generation of winemakers is a determination to reflect a more honest expression of the terroir, without extractions and moving the wood to the background. With a presence in 18 different denominations with around 17 hectares planted, the estate has really taken off in the last decade with the ecological certification for all their vineyards.
René Bouvier Aligoté Vieilles Vignes comes from old vines planted in calcareous gravel soils. They practice ecological, organic and biodynamic agriculture that takes care of the environment. When the grape reaches its optimum ripeness, it is selected and harvested manually in 15 kg boxes.
Once it passes over the selection table and is destemmed, the René Bouvier Aligoté Vieilles Vignes grape is vinified by pressing whole bunches. Malolactic fermentation takes place in stainless steel tanks. Then it ages in barrels for 12 months.
René Bouvier Aligoté Vieilles Vignes is a white wine that highlights the rare talent that this winery, and especially its winemaker Bernard Bouvier, has in knowing how to make both red and white wines.
