Characteristics of Recaredo Brut de Brut Finca Serral del Vell
Brut de Brut Gran Reserva is a cava produced under the D.O. Cava by the Recaredo winery, which is situated in Sant Sadurní d’Anoia and dates back over 90 years.
The winery works with 50 hectares of family vineyards in the Alt Penedès, with a commitment to preserve the biodiversity and the soils. This has led them to follow the principles of biodynamic and organic farming. Other of its principles is to work with long aging processes and with Brut Nature, ie, without any dosage or addition of sugar during the bottling process.
Brut de Brut comes exclusively from the Serral del Vell estate, where the Xarel.lo and Macabeu grapes are planted in calcareous clay soils.
In regards to the production process, the Xarel.lo must ferments in oak barrels and is blended. econdary fermentation and bottle ageing are done exclusively with natural cork stoppers. The cork is sustainable, recyclable and has a duration of 80 years. The disgorging process is done by hand without freezing the neck of the bottle.

Cava was born under the constant shadow of its French counterpart, Champagne. However, produced over 1,200km away and a gap of over 100 years, Cava was always going to be a completely different product, even if produced using the same method and and sometimes with the same varieties. Firstly the climate and soil have a profound impact on the yields, while the plant strains that thrive here and completely different to those in the Champagne region. Fortunately, as more winemakers are becoming convinced of this, they are producing Cavas with their own personality, showing off the art of the second fermentation in the bottle like no other wine region in the world.
The winery produces Recadedo prestigious cava is located in Sant Sadurni d'Anoia. It is a family winery with a character size of 46 ha. and a natural balance of the vine.
