Characteristics of Ramon Canals Gran Reserva Limitada
Ramon Canals Gran Reserva Limitada is a cava brut nature from the D.O Cava produced by the winery Canals y Canals. This cava is a blend of 3 different grape varieties: Xarel.lo (50%), Macabeo (34%) and Parellada (16%).
The grapes used for Ramon Canals Gran Reserva Limitada are grown on soils composed of limestone that are poor in organic matter, which results in producing quality grapes. The vineyards are situated at around 100-300 metres above sea level.
The area is home to a mediterranean climate, which is warm and temperate. It is an ideal climate for growing grapes.
The harvest is carried out manually using boxes with a 25kg capacity. This way, the granes do not start to ferment nor break on the way to the winery.
At the winery, the grapes are pressed in pneumatic presses, obtaining the free-run juice. Each variety of grape is then vinified independently in stainless steel tanks at a controlled temperature.
Finally, Ramon Canals Gran Reserva Limitada ages for 42 months in the bottle before undergoing the disgorging process, following traditional methods.

Cava was born under the constant shadow of its French counterpart, Champagne. However, produced over 1,200km away and a gap of over 100 years, Cava was always going to be a completely different product, even if produced using the same method and and sometimes with the same varieties. Firstly the climate and soil have a profound impact on the yields, while the plant strains that thrive here and completely different to those in the Champagne region. Fortunately, as more winemakers are becoming convinced of this, they are producing Cavas with their own personality, showing off the art of the second fermentation in the bottle like no other wine region in the world.
