Quintarelli Valpolicella Classico Superiore is a barrel-aged red wine made with the Cabernet Sauvignon, Corvina, Rondinella, Nebbiolo, Corvinone and Croatina varieties by Giuseppe Quintarelli in the DOC Valpolivella Classico Superiore (Veneto).

A project set up by the great Giuseppe Quintarelli, father of Amarone, and currently run by his family under the same principles. In order to be classed as Quintarelli Valpolicella Classico Superiore, the grapes must come from the vineyards in the foothills of the Veneto mountains in northern Italy. A place that experiences cold winters and hot summers, which results in low yields but highly concentrated berries. They practice environmentally-friendly agriculture and the harvest is carried out manually.
When the Quintarelli Valpolicella Classico Superiore grapes reach the winery, they are pressed before macerating and fermenting for 3 or 4 days with native yeasts. Then the wine is racked and it rests on lees to begin the second fermentation. Finally, the wine is left in large Slavic oak barrels for 7 years.
