Characteristics of Quíbia
Quíbia is a white wine from Mallorca, produced by the Ànima Negra winery. The winery is located southeast of the island of Mallorca, in Son Burguera, near the village of Felanitx.
Quíbia is made from native varieties Premsal Blanca and Callet (a red variety). The vineyards are cultivated by environmentally friendly methods.
For processing, the grapes are cooled on a cold bed on a bed of dry ice to avoid oxidation. They are then selected manually. After selecting, the must is fermented at a low temperature and aged on its lees for about 3 months in cement tanks.
Quíbia is a very special white wine, with limited production.
