Characteristics of Paso a Paso Verdejo
Paso a Paso Verdejo is a white wine from La Mancha made by Volver, a winery founded in 2004 by Jorge Ordoñez and Rafael Canizares, two very important people in the wine world as they were responsible for the international boom of Spanish wine in the 90s.
In this area, the Mediterranean climate is characterized by harsh winters, hot summers and strong thermal oscillations, i.e. an arid climate. Temperatures in La Mancha are very extreme due to the continental influences. This wine is a varietal Verdejo from a 110 hectare vineyard located at an altitude of 660 metres. The vineyard was planted 20 years ago on sandy soil with a high limestone content. As for processing, after the meticulous selection process, the grapes remain in stainless steel tanks to undergo fermentation.
This production area has always been one of the most striking in the nation’s geography, for being the world’s leading vineyard in terms of cultivatable area, as well as for the volume of wine produced.
