Pascal Cotat La Grande Côte is a monovarietal organicSauvignon Blanc dry white wine produced by Pascal Cotat in the region of Sancerre, in France.
Pascal Cotat is a winemaker who produces some of the most unique Sauvignon Blanc wines in the world. He works from a small winery that is located in Chavignol, Sancerre. The area where its vineyards are located is on a chalk plateau that has a characteristic soil that in French is known as "terres blanches" and where the calcareous and clayey components predominate, very similar to those in Chablis.
The wine know as Pascal Cotat La Grande Côte comes from an exceptional plot located on very steep slopes and on calcareous soils rich in fossils and silex. To produce it Pascal harvests later than usual, encouraging the grapes to ripen to the extreme in order to obtain wines with more texture and complexity.
The harvest is carried out manually, and although his wines are not certified as being organic, Pascal Cotat is governed by the principles of organic farming and biodynamics. Pesticides are not applied in the vineyards.
