Characteristics of Pascal Cotat La Grande Cote

Pascal Cotat La Grande Côte is a monovarietal organic Sauvignon Blanc dry white wine produced by Pascal Cotat in the region of Sancerre, in France.

Pascal Cotat is a winemaker who produces some of the most unique Sauvignon Blanc wines in the world. He works from a small winery that is located in Chavignol, Sancerre. The area where its vineyards are located is on a chalk plateau that has a characteristic soil that in French is known as "terres blanches" and where the calcareous and clayey components predominate, very similar to those in Chablis.

The wine know as Pascal Cotat La Grande Côte comes from an exceptional plot located on very steep slopes and on calcareous soils rich in fossils and silex. To produce it Pascal harvests later than usual, encouraging the grapes to ripen to the extreme in order to obtain wines with more texture and complexity.

The harvest is carried out manually, and although his wines are not certified as being organic, Pascal Cotat is governed by the principles of organic farming and biodynamics. Pesticides are not applied in the vineyards.

In addition, he is guided by the lunar cycle when it comes to decanting his wines, which ferment with their native yeasts and age in demi-muids, large barrels. None of the wine is filtered.

Pascal Cotat's work results in wines that could age for decades; extraordinary wines that defy time while combining elegance and a lot of energy.

Tasting notes Pascal Cotat La Grande Cote

Pascal Cotat La Grande Côte 2017 is a dry white wine that reveals aromas of lemon zest, fresh pears and a subtle herbal note. With a lot of mineral expression. On the palate it is juicy and penetrating, with notes of stone fruit and white pepper, yet without losing its mineral touch. It is a wine with a great potential for flavours and a reinforced acidity that may age for decades.
