Characteristics of Pardas Collita Roja

We find ourselves before one of the most surprising and original red wines that can be found, and one of the purest expressions of the winemaking tradition. A return to the past, when wine was powerful, warm, light and tasty.
Pardas Collita Roja is a red wine from the D.O. Penedès made from the indigenous and almost disappeared Sumoll grape variety. The Sumoll is harvested from small vineyards planted more than 60 years ago, with grapevines twisted by time and no intervention in their natural processes, allowing the vines to grow at their whim.The Sumoll is nuanced with a small percentage of Marselan (15%).
The winemaking processes are carried out separately according to variety and the vineyard from which the grape comes. The Sumoll undergoes fermentation in steel deposits and in open chestnut barrels. Its malolactic fermentation takes place in stainless steel tanks where the wine stays for 3 months before being put into the barrels where is stays for 12 months. Once the entire process is finished, it is placed in steel deposits again for 4 months more. The Marselan undergoes a malolactic fermentation in French oak barrels, 15% of which are new and the rest first and second year. It rests in these barrels for 16 months approximately. Once this whole process is finished, the blend is made and the wine is bottled during the month of July. It is recommended decanting this wine at least an hour before serving since it is a rather closed wine and needs time to open up.

The name is a hommage to one of the great crime novels by Hammett, Red Harvest.

Sight Intense cherry red colour with ruby â??â??edges and some dark maroon reflections. Very bright wine. Nose Intense and deep aromas. It is pure minerality, with great notes of stone, wet land and shady undergrowth, which give way to subtle spices and great notes of fruit which stay in the background. Taste Very powerful, concentrated and comprehensive wine with a surprisingly light mid palate. It is very tasty and its minerality its very noticeable. Its herbal and balsamic notes are also felt. It has a marked pleasant acidity and a long finish with hints of vegetables.

Winery Pardas

Today, the D.O Penedès is experimenting with viticulture and winemaking like no other region in Spain, home to a vast range of different grape varieties. The region is home to traditional white and red varieties, foreign ones, noble ones, permitted grapes, experimental grapes, and those that demostrate intrinsic qualities. As well as the grapes, the production techniques used are also worth noting, the location of the vineyards, the yields per hectare, the wines produced using traditional, original or even exclusive blends, the different ageing times, as well as the complexity of the different barrels used! But the reality is, given the vast diversity, it can be difficult to pinpoint what really defines a wine from Penedès, since there are so many types of wines and wineries in the region. However, the common denominator of all the wines from Penedès continues to be balance and quality.

Celler Pardas has two proper names, Ramón Parera and Jordi Arnan, who join their knowledge in the land and in the wine. They settled in the municipality of Torrelavit to start cultivating the farm Finca Can Comas, with the aim of making great wines, full of pureness and in connection with the terroir of Penedés. They work with different local varieties that already existed in their farm, like the Monastrell and the Xarello, and in a very special way, with the red variety Sumoll. However, they also cultivate small amounts of other foreign varieties like the Cabernet Sauvignon, Cabernet Franc, Merlot and Marselan, among others.
