Characteristics of Pardas Blau Cru
Pardas Blau Cru is a white wine produced by Celler Pardas, in Torrelavit,D.O. Penedès.
In 1996, Ramon Parera and Jordi Arnan start the Pardas project to produce the best wines possible from Can Comas, an abandoned farm with woods, fallow lands, dry land and pastures. Once the vineyards were in shape and balanced, in 2004 they make wine from their first harvest . Finca Can Comas, located at 200-300 metres above sea levels, has a wide diversity of soils, and an irregular, mild and semi-arid Mediterranean climate. Sustainable agriculture with little intervention is used to cultivate the vines (the winery calls is "non-cultivation): no herbicides, insecticides, nor synthesis products. They don't till the land to avoid erosion and they use spontaneous vegetation to protect it.
Pardas Blau Cru is made from Malvoisie. Manual harvest, destemmed and maceration for 6-7 hours. Fermentation at 16ºc with periodical batonnage for 20 days.
Pardas Blau Cru is an unctuous, mature and extremely aromatic wine.
Today, the D.O Penedès is experimenting with viticulture and winemaking like no other region in Spain, home to a vast range of different grape varieties. The region is home to traditional white and red varieties, foreign ones, noble ones, permitted grapes, experimental grapes, and those that demostrate intrinsic qualities. As well as the grapes, the production techniques used are also worth noting, the location of the vineyards, the yields per hectare, the wines produced using traditional, original or even exclusive blends, the different ageing times, as well as the complexity of the different barrels used! But the reality is, given the vast diversity, it can be difficult to pinpoint what really defines a wine from Penedès, since there are so many types of wines and wineries in the region. However, the common denominator of all the wines from Penedès continues to be balance and quality.
Celler Pardas has two proper names, Ramón Parera and Jordi Arnan, who join their knowledge in the land and in the wine. They settled in the municipality of Torrelavit to start cultivating the farm Finca Can Comas, with the aim of making great wines, full of pureness and in connection with the terroir of Penedés. They work with different local varieties that already existed in their farm, like the Monastrell and the Xarello, and in a very special way, with the red variety Sumoll. However, they also cultivate small amounts of other foreign varieties like the Cabernet Sauvignon, Cabernet Franc, Merlot and Marselan, among others.
