Pansal del Calàs is a sweet wine from Montsant, prepared by Celler de Capçanes. This winery is named after the town where it is located, Capçanes, a village in the centre of Priorat, within the province of Tarragona.
Celler Capçanes is a cooperative known in the wine world for pioneering the development of Kosher wine, suitable for consumption by the Jewish community. Pansal del Calàs is a blend made from the Garnacha (70%) and Carignan (30%) varieties. The grapes come from old vines between 60 and 85 years old, planted at an altitude of 500m on terraces of clay and granite soil.
The development of Pansal del Calàs begins in mid-October with a late harvest and subsequent transportation of the grapes in boxes of 20kg.
Once in the cellar, the two varieties are macerated for 30 days together before fermentation. The seventh day is interrupted to add alcohol to the wine in order to maintain a high concentration of sugars.
Pansal del Calàs is aged for 16 months in new French oak barrels for 1 year and then 3 months in tanks before bottling.
