Characteristics of Ònix Evolució
Ònix Evolució is a red wine from the Priorat region produced by Vinícola del Priorat. The wine is a blend of 3 different grape varieties: Mazuelo (40%), Garnacha Tinta (40%) and Cabernet Sauvignon (20%).
The grapes used to make Ònix Evolució are selected from more than 300 plots of vineyards that the winery owns, grown on slate soils.
The winery is carried out manually, with the grapes being transported to the winery in small boxes of a 15kg capacity. This way the grapes do not break and loose their qualities prematurely before the vinification process takes place.
At the winery, the grapes pass through a crusher-destemmer. Then they are placed in stainless steel vats of 5,000 litres, with warm and cold temperature control. The after pre-maceration in cold, alcoholic fermentation at takes place at 28˚C. Then, maceration takes a minimum of 25 days followed by malolactic fermentation. The wine then ages for 12 months in french oak barrels.
Vinícola del Priorat is a local cooperative formed by 140 farmers who oversee and manage all aspects of the winemaking process: from the cultivation of the vineyards all the way to the marketing of the wine.

Priorat is craftsmanship and tradition, old and robust vines that are grown and born deep inside the province of Tarragona. They are grown on slopes that are sleety with low fertility and difficult to grow in. In Priorat they produce great red wines of an excellent quality, a maroon colour, robust, dense and rich flavour, intense aromas and sometimes there are reflections present of minerals from the soils.
The Priorat winery is located in the town of Gratallops, born in 1991 to consolidate the production of small local cooperatives. The environmental conditions make the wine year after year of exceptional quality. Following a traditional preparation.
