Elvi Wines is a family-run company, operated and directed by the married couple formed by Moisés and Anna Cohen. Moisés is originally from Casablanca, but he left at the age of 17 to pursue the Aliyah. In 1979 he was admitted to the prestigious Institute of Technology of Israel (Technion), where he graduated with a PhD in Agricultural Engineering. His post-doctoral project led him to Priorat, where he was part of an extensive study that focused on the use of new technologies for more efficient management of agricultural water. However, he ended focusing on the vineyards and viticulture. During that time he met Anna, who would become his wife and partner. Anna is an art lover and also a sommelier with a certificate from Toulouse. During his years of research, Moisés patented a vineyard monitoring technology, which was the foundation stone of his first business as a consultant and advisor in some of the region's main wineries. During a decade of consulting, Moisés established a Jewish-owned wine business in Spain, after the Jewish community was given the right to own Spanish land once again. This was when Moisés and Anna acquired a piece of land in the Montsant, where they have their house, the vineyards and the newly built winery Clos Mesorah. In 2003 they founded Elvi Wines to create Kosher wines in different regions of Spain.
Despite the production of premium wines for more than a decade, and its distribution throughout the continental United States, Elvi was one of those brands whose market penetration ranks well below the quality of their wines.
The requirements of making a Kosher wine, currently cause Elvi to have a close relationship with other six wineries throughout Spain during the entire process: D.O.Q. Priorat, D.O.Ca. Rioja, D.O. Ribera del Júcar, D.O. Valencia, D.O. Alella, D.O. Montsant and D.O. Cava. Elvi Wines has its own private space in each and every one of the wineries for the production and storage of their Kosher wines. Here, the wines remain sealed, under constant surveillance, and awaiting the next scheduled visit of the authorized Kashrut supervisor. Surveillance is guaranteed at all levels, and Elvi Wines takes part and cooperates in all the processes, from the entry of the grape into the processing plant, to the final moment, when the essence of tradition is carefully preserved in the bottle. Anna actively participates in the definition of wines, from the post-harvest to the bottle, while Moisés supervises the vineyards and works hand in hand with the rabbis to supervise the wines.
WINES FROM ELVI WINES
Wines from Elvi Wines are divided into three categories: Clásicos, Selección and Élite. Within their collection of classics ("Clásicos") we can highlight their Viña Encina Mevushal, with a white made with Muscat, a rosé made with Syrah and a red made with Tempranillo, all of them under D.O. La Mancha.
In their selection range ("Selección") we can point out Herenza, a red wine made with Tempranillo from Rioja Alta, aged for 5 months in barrels, as well as Herenza Crianza, also made with Tempranillo, from the vineyard "Los Majuelos" located in Sajazarra, and produced in Bodegas Sajazarra, both under D.O.Ca. Rioja. We can also find their white wine Invita, with grapes of the varieties Pansa Blanca (Xarello) and Sauvignon Blanc, from their own vineyards located in Roca del Vallés, in the site of Bell-lloc, under D.O. Alella. A white wine of elegant, expressive aroma: ripe fruit, citrus and tropical notes. In the mouth it is fatty, fresh, complex and persistent.
Among the "Élite" wines, the red wine El 26 stands out. It is under D.O.Q. Priorat, made with 45% Samsó, 35% Grenache and 20% Syrah, and aged for 18 months in oak barrels. It is a rich wine, with black fruit, spices and a good balance. Fresh, fruity, aromatic fruit boosted by the good integration of the wood. Good acidity and a light hint of ripe black cherries. Deep, concentrated, lingering and persistent. Special attention should be given to their Clos Mesorah, a red wine under D.O. Montsant, made with Grenache, Carignan that is over 100 years old, and Syrah. It goes through malolactic fermentation and ageing for 15 months in 225-litre French oak barrels. It is a wine without filtering or clarifying. Fresh, fruity, with very aromatic fruits, and notes of ripe cherries. Good integration of the wood that enhances its fruit. A rich bouquet, spices and good balance. Silky tannins. Deep, with a pleasant concentration and a long aftertaste. Elegant and complex. Adar is a red wine under D.O. Ribera del Júcar, made with 37% Cabernet Sauvignon, 35% Petit Verdot and 28% Syrah. It goes through spontaneous malolactic fermentation in the same deposits and aged for 12 months in new French and American barrels. It offers an expressive aroma, of fresh red fruit, with notes of undergrowth. In the mouth it is tasty, fruity, with good acidity, and mature and soft tannins. Within this group we can also find Herenza Reserva, under D.O.Ca. Rioja, made with the Tempranillo variety from the vineyard "Los Majuelos", located in Sajazarra, and produced in Bodegas Sajazarra. It is aged for 30 months in new and second-use barrels, 65% American oak and 35% French oak. Aroma of good intensity, very fine and elegant, with very ripe red and black fruit, well integrated with good quality oak. Blunt in the mouth, unctuous and ample, with noble tannins of sweet and ripe skins. A very elegant wine.
