Noé Pedro Ximénez is a sherry from the D.O Jerez produced by the González Byass winery. This is a single variety wine, made using only the Pedro Ximénez grape variety.
The grapes used for this sherry come from the Esteve estate, situated in the ´zona superior´ of Jerez. The grapes used for Noé Pedro Ximénez undergo the traditional phases of drying undergone by this variety. In the same vineyard, the age-old "soleo" sun-drying method is carried out, a process which is also known by the name of “pasificación”.
Noé Pedro Ximénez is aged using the solera method, using American oak barrels and lasting for over 3 decades. This is unique and unmistakable wine is the work of winemaker Antonio Flores, who never disappoints.
The González Byass winery is a sign of excellence in the Jerez region. Founded in 1835, the same year they started exporting to London. A spirit of exporting that remains alive today, with over 70% of their products being exported and sold outside of Spain.
