Milan Nestarec Antika Podfuck is a natural white wine that macerates with its skins, made by Milan Nestarec with the Pinot Noir variety in Moravia (Czech Republic).
Although the Czech Republic is more famous for its beer than its wine, there is one local winemaker who is revolutionising the market. His name is Milan Nestarec, a young entrepreneur who, after spending time in Slovenia learning to make orange wines with the great Aleš Kristančič from Movia, decided to start his own project. He is a member of the “Autenti-se” group, a community of winemakers who make authentic wines, and he cultivates 8 hectares of family vineyards 14 km from the Austrian border with native varieties and using ecological practices. He also tries to intervene as little as possible in the winery, which results in wines that are unfiltered, unclarified and without sulphites.
Milan Nestarec Antika Podfuck comes from a 35-year-old vineyard planted 220 m above sea level on loess soils. To try and achieve the most honest expression of the terroir, no herbicides or chemicals are used in the vineyards. The strain is cultivated using only organic and biodynamic practices. All the work is manual and the harvest takes place at the optimum point of ripeness.
In the winery, the Milan Nestarec Antika Podfuck grapes are destemmed and gently pressed. Then, the resulting must is allowed to spontaneously ferment with skins in 600-litre, 4-year-old barrels for 14 days. Finally it ages in 225 litre barrels over 16 months.
