Characteristics of MicroBio Sin Rumbo
MicroBio Sin Rumbo is a natural single-variety Verdejo white wine made by MicroBio Wines in Castilla y León, Spain.
The grapes used to make MicroBio Sin Rumbo are from pre-phylloxera vines dating back to 1872 and located in the village of Nieva, in Castilla y León, planted in poor soils with siliceous sands, gravels and boulders.
MicroBio Sin Rumbo is not made according to conventional methods. The clusters are harvested manually and collected in small boxes. When the grapes are cold, they are pressed in whole clusters using a small vertical press to achieve hyperoxidation of the must, which is then partially racked to begin fermentation in barrels with native yeasts. The first two weeks are controlled to be slow and then the opposite until the process is finished.
This unconventional procedure results in a slightly volatile wine, which gives it an interesting personality, enhancing the aromas and slightly increasing the acidity.
It might seem that this MicroBio is made “Sin Rumbo” (aimlessly), but Ismael Gozalo, who runs MicroBio Wines, knows exactly what he is doing and works by his own rules but always in partnership with nature, which he respects by cultivating his plots biodynamically and with minimal intervention. This allows the Verdejo variety to be unusually expressive, which goes beyond the limits of what we know, and is a pleasant surprise. They only make two barrels per year, and drinking this white wine is certainly a fascinating experience.
