Characteristics of MicroBio Rack
MicroBio Rack is a white wine without denomination of origin produced by the winery MicroBio Wines in Nieva (Segovia).
MicroBio Wines is the persona project of Ismael Gozalo, who alongside Javier Zaccagnini created Ossian. Since 1998, Ismael makes his wines also outside the family winery, Viñedos de Nieva. He started making young wines, fresh and quite varietal, but he soon began to work with a bio or natural line of wines to enhance the personality of the variety and the soil, above all.
To produce these wines, Ismael has family pre-phylloxera and ungrafted vines. They are cultivated organically, but he does not want to be given this label. A large percentage of all the grapes is still sold to producers from the area, like Ossian itself.
MicroBio Rack is a wine made from Verdejo from different vineyards in the area planted ungrafted on soils with siliceous sands and boulders.
Once the grapes are harvested and pressed in the winery, they ferment with native yeasts in stainless steel deposits, working with the musts and the fermentation with hight turbidity so that the wine becomes self-protected. Once the fermentation has ended, it is left to rest for 3 months in the same deposits with its lees, without pumping-overs nor batonnage, to preserve the reduction. It is bottled without added sulphites.
MicroBio Rack is a natural, light and fluid wine. On the nose, the aromas of ripe white fruit and stone fruit stand out, with notes of flowers and citrus. Easy to drink, with a long and persistent finish.
