MicroBio Nieva York is a sparkling wine without denomination of origin produced by the winery MicroBio Wines in Nieva (Segovia).
MicroBio Wines is the persona project of Ismael Gozalo, who alongside Javier Zaccagnini created Ossian. Since 1998, Ismael makes his wines also outside the family winery, Viñedos de Nieva. He started making young wines, fresh and quite varietal, but he soon began to work with a bio or natural line of wines to enhance the personality of the variety and the soil, above all.
To produce these wines, Ismael has family pre-phylloxera and ungrafted vines. They are cultivated organically, but he does not want to be given this label. A large percentage of all the grapes is still sold to producers from the area, like Ossian itself.
MicroBio Nieva York is a sparkling wine, petillant naturel (Pet Nat) made from Verdejo from different vineyards in the area planted ungrafted on soils with siliceous sands and boulders.
The grapes used in this wine are the first ones of the harvest. After a manual harvest, the grapes are pressed in a vertical press. They ferment with native yeasts at a low temperature and with low turbidity. The fermentation ends in the bottle with no added sulphites.
MicroBio Nieva York is an ancestral sparkling wine, fresh and light. On the nose, the aromas of ripe white fruit and stone fruit stand out, with notes of flowers. With very fine bubbles. In the mouth, it is light and very refreshing.
