MicroBio Frágil is a natural single-variety Verdejo white wine produced by the MicroBio Wines winery in Castilla y León, Spain.
The grapes used to make MicroBio Frágil come from pre-phylloxera vineyards where the vines are trained in bush form and cultivated under the principles of biodynamic agriculture. After pressing, the must is settled with low turbidity and placed into 16-litre glass demijohns where it ferments slowly with its native yeasts at a constant temperature of 13 degrees, which is the most common practice in underground wineries and helps to conserve the variety’s primary aromas.
After this slow fermentation process, the wine rests with its own lees. This aging in glass containers gives the wine natural protection and adding sulphur is not necessary.
Ismael Gozalo is the soul of MicroBio Wines. He works with the utmost respect for tradition and nature and intervenes as little as possible to create lively wines with their own soul and personality but without neglecting the varietal character of the fruit, which is the real star.
Fragile MicroBio is a subtle, delicate, gentle wine, as the name suggests, but with the full expression and character of the Verdejo variety. An unmissable very limited production wine.
