Characteristics of Mibal Joven
Mibal Joven is a red wine from the D.O. Ribera del Duero made by Hornillos Ballesteros, a winery set up by Miguel Hornillos and Javier Ballesteros, both from different winemaking families.
This wine is made 100% from Tinta del país grapes from one of the winery's vineyards planted with 14 year old vines.
The grapes are collected in 12 kg boxes and are rigorously selected, throwing away the inferior quality grapes. They are destemmed and then either pressed, or else go directly into the pump which gently transports the grapes to the deposits.
The grapes macerate for 20 days at a temperature controlled at less than 18ºC, with the grapes whole and destemmed in order to conserve all the fruity aromas of the grape. The malolactic fermentation takes place in stainless steel deposits, where the wine then ages on its fine lees. It is clarified and before bottling is lightly filtered.
