Characteristics of Matassa Romanissa Casot
Matassa Romanissa Casot is a natural red wine made with Hairy Grenache and Cariñena, and sometimes a little Mourvedre. It is produced by Domaine Matassa, a winery in Languedoc-Roussillon.
Domaine Matassa is a winery in the south of France that has small plots of very old vineyards. In total they cover some 15 hectares. They cultivate them according to the principles of biodynamics and in preparing their wines they use very little sulphite and no auxiliary processing additives, all to ensure that the final wine is the pure expression of the grapes and the terroir from which it comes.
The soils of the vineyards for Matassa Romanissa Casot are composed of iron-rich slates. They are between 30 and 115 years old and produce a very low yield of around 15 hectolitres per hectare. All the plots are harvested manually to respect the grapes to the maximum and so that the best bunches can be selected while still in the field.
Matassa Romanissa Casot is made by vatting a part of the whole bunches. After fermentation, it is aged in 228 and 500 litre barrels for a period of 22 to 24 months. It is bottled with the wine having previously been filtered very gently but without clarifying it.
Matassa Romanissa Casot is a pleasant red in which fruit is present and ageing has given it complexity and reinforced its structure.

Matassa Romanissa Casot 2017 has a delicate nose with notes of red fruit and flowers, and touches of spices and balsamic elements. On the palate it is fresh, with a good front and middle mouth and a pleasant aftertaste, with memories of what is perceived on the nose and hints of undergrowth.
