Characteristics of Martín Codax Organistrum
Martín Codax Organistrum is a white wine from the D.O. Rías Baixas made by Martín Codax. This wine is named after this unique instrument (Organistrum) that needs to be played by two people. Only two replicas exist now and one of them is used by the Grupo de Música Antiga Martín Códax in their performances.
This wine has been made with a selection of grapes from southeast facing vineyards. It's partially made in the barrel. After the fermentation, the wine ages for four months in Allier French oak barels. During the first month and a half the battonage technique is applied. Once both fermentations finish, it is kept in stainless steel deposits for 8 months to achieve a good integration.

The Albariño grape is a spanish white variety with a strong floral and terpene character, ideal for producing not only young fresh and aromatic whites, but also (barrel) aged wines. Initially the DO. Rías Baixes was only seen as a region of great hope for Spanish whites, but it has managed to turn this hope into reality.
The first Albariño with the Martín Códax label was made from the 1986 harvest. Its name evokes the figure of a medieval poet and illustrious troubadour, and it was the first serious project in Rías Baixas to definitively challenge the image of sparse and cloudy wine. After years of hard work, large investments and difficult decisions, this winery has demonstrated that it not only holds a sixth sense for foretelling new trends in the wine market, but can also execute them with impeccable skill.
