Máquina & Tabla Nicasia Blanco is a biodynamic white wine made with the Verdejo variety in the D.O. Rueda by Máquina & Tabla.
Founded in 2013, Máquina & Tabla is made up of a collection of vineyards located in Bierzo, Rueda, Toro and Gredos. Oriol Illa and Susana Pastor, the couple behind this project, work with a their focus on the vineyard, promoting old and native varieties, encouraging responsible agriculture and intervening as little as possible in the winery. As a result, they offer a collection of wines from the most expressive and surprising different areas.
The Máquina & Tabla Nicasia Blanco grapes come from El Pinar, a 1.5 hectare vineyard located in the town of Torrecilla de la Abadesa (D.O. Rueda). These are old vines aged between 50 and 60 years old, planted in a clay limestone subsoil and cultivated using organic practices and biodynamic treatments. The grapes are harvested by hand.
When the grapes are harvested, they are taken to the winery to be pressed whole. Máquina & Tabla Nicasia Blanco then macerates with skins for two weeks and ferments spontaneously with native yeasts. It then ages in oak foudres for 10 months.
Máquina & Tabla Nicasia Blanco is the result of people and nature working together. Respectful human intervention that results in a bright and innovative white wine.
