Máquina & Tabla is a project that began in 2012 thanks to Oriol Illa and Susana Pastor. Starting from scratch, they visited the entire region, searching for the best vineyards, the oldest ones.
Máquina & Tabla cultivates the vines using biodynamic parameters, with utmost respect for the land and nature. They make top-quality wines with minimum intervention, in rented facilities, as of right now.
It seems like hard work is paying off: Máquina & Tabla normally appears in the best positions of specialised magazine rankings.
Máquina & Tabla Blanco is a wine made from Verdejo form a vineyard located in Hornillos de Eresma, planted with century-old vines, pre-phylloxera, and with white sand soils on a clay subsurface. Yields are very low.
The harvest is performed by hand. Once the grapes arrive at the winery, they macerate in cold for 36 hours. After this, the grapes are pressed and they start fermenting with native yeasts in 600-litre French oak barrels. Here, they are left for 11 months.
Máquina & Tabla Blanco is a creamy, deep, fresh wine. Very clean on the nose, with notes of flowers and white fruit. In the mouth it is unctuous but easy to drink, with a mineral background that makes it very long lasting. A genuine Verdejo.
