Characteristics of Mancuso
Viñedos de Mancuso is a winery founded in 2000 by the family Navascués and Carlos San Pedro (Bodegas y Viñedos Pujanza). It is located in the Moncayo massif, in Jarque de Moncayo (Zaragoza). The 9-hectare Grenache vineyard (around 50-80 years old) are grown on steep slopes in soils with scarce fertility and a great organic richness. In order to produce Mancuso 2005 (VT Valdejalón), a cold pre-fermentative maceration is conducted. The alcoholic fermentation takes place in stainless steel deposits at 26ºC and subsequently the wine stays with the grape skins during a post-fermentative maceration for 24 days. Finally, once the malolactic fermentation is completed, the wine is taken into new French oak barrels from Allier for 14 months. Before its commercialization, it is aged in the bottle for 8 more months.
