Characteristics of M100
M100 is a white wine from the D.O. Penedés made by Can Descregut, a winery that strives to make high quality wines with personality, that reflect the winery's philosophy and the terroir from where they come. This winery, with scarce production, respect the environment by using organic farming methods. They are certified by the CCPAE.
This wine is a Macabeo (100%) single-varietal. The grapes come from a vineyard planted in 1971, with vines planted in a low-vine plantation system, situated at a height of 250 m above sea level.
To make the wine, a short cold pellicular maceration is carried out. The must is then subject to a static debourage at 13ºC followed by the alcoholic fermentation of 40% of the must in Hungarian oak barrels,, the rest ferments in stainless steel deposits with later work on its lees for 4 months, with regular lees stirring (batonnage).

Today, the D.O Penedès is experimenting with viticulture and winemaking like no other region in Spain, home to a vast range of different grape varieties. The region is home to traditional white and red varieties, foreign ones, noble ones, permitted grapes, experimental grapes, and those that demostrate intrinsic qualities. As well as the grapes, the production techniques used are also worth noting, the location of the vineyards, the yields per hectare, the wines produced using traditional, original or even exclusive blends, the different ageing times, as well as the complexity of the different barrels used! But the reality is, given the vast diversity, it can be difficult to pinpoint what really defines a wine from Penedès, since there are so many types of wines and wineries in the region. However, the common denominator of all the wines from Penedès continues to be balance and quality.
Can Descregut the farmhouse was built in the early nineteenth century. This house is in the middle of the flat Penedés between Vilobí i Font-Rubí. The cellar of the house Pairal is complemented by a modern winery that has the most modern winemaking technology to produce their wines.
