Les Sorcières du Clos des Fées is a red wine coupage of Syrah, Grenache Tinta and Cariñena from the AOC Côtes du Roussillon produced by Clos des Fées.
Clos des Fées is a winery located in Vingrau. It is run byHervé Bizeul and his wife Claudine. They cultivate their vineyards in the Agly Valley, in Roussillon. They started making wines for pure pleasure, but thanks to their passion and talent their first wine, named La Petite Sibérie, was a great success, and they were able to devote themselves professionally to winemaking. They currently have plots throughout the valley, some with vines that are over a hundred years old.
The vineyards for Les Sorcières du Clos des Fées are between 40 and 80 years old for those withGrenache and Cariñena, and about 25 for those with Syrah. The soils are of limestone and clay and all the plots are harvested manually.
The grapes for Les Sorcières du Clos des Fées undergo a pre-fermentative maceration at low temperature in stainless steel tanks. They then ferment and macerate with the skins for about 2 or 3 weeks, with the skins being gently extracted. The temperature is controlled at all times so that unpleasant aromas do not occur during the process. Malolactic fermentation then takes place, and the wine then ends up being aged in tanks for 8 months on its fine lees. Very little sulphite is used during vinification, ageing and bottling.
Les Sorcières du Clos des Fées is a fresh, fruity and silky wine suitable for immediate consumption or for laying down for up to a little more than seven or eight years.
