Characteristics of La Salada La Bufarrella
La Salada La Bufarrella is a white wine without denomination of origin, prepared by the La Salada winery in Les Parellades del Pla del Penedés (Barcelona).
In 2011 Toni Carbó, a colleague of Ramón Jané in Mas Candí founded La Salada as a personal project together with his wife Anna. This winery was conceived with the aim of producing natural wines as in the past, while respecting the grapes, the vineyard and its surroundings to the maximum.
To do so they have old family vineyards in the heart of the Penedés, located at a low altitude, on clay-chalky soils, most of them not very fertile and with gentle slopes. The result is authentic wines, whose personality reflects the deep relationship that Toni and Anna have with the land and the vineyard.
La Salada La Bufarrella is a white wine made with Xarel·lo grapes from a vineyard planted in 1982 in the Pla del Penedés, on a slope facing north, on clay-chalky soils and worked with minimal intervention.
The grapes, which are selected in the vineyard, are harvested manually and placed in 12 kg boxes. Once in the cellar, the grapes are cooled to 4°C for 24 hours in cold rooms. Fermentation takes place in stainless steel tanks with native yeasts, and a maceration is performed with the skins for four and a half months. The wine is bottled according to the lunar calendar without sulfur and unfiltered.

La Salada La Bufarrella 2016 is a deep, crisp and sharp white wine. This vintage displays all the personality of the variety with frankness. Aromas of ripe white fruit with floral notes and a touch of fresh yeast in the nose. On the palate it is juicy with volume and freshness, and with a very lingering finish.
