La Danza del Viento is a red wine made by the 4 Monos Viticultores cellar in Madrid.
4 Monos Viticultores is a small winery located in the Sierra de Gredos in the province of Madrid. It is a winery that practices environmentally friendly viticulture, avoiding the use of herbicides and organic fertilisers when necessary.
La Danza del Viento is a single varietal Grenache. The grapes come from a single plot, planted with old vines more than 70 years old, at an altitude of 750 metres, with a west-northwest orientation. The soil is sandy with granite rock on the surface.
The harvest is done manually and the grapes are quickly transferred to the cellar where a manual selection of the best clusters is performed.
The fermentation starts after a traditional treading of the grapes in small tanks. Maceration is done cold for 20-35 days, looking to extract the ultimate expression from the terroir. La Danza del Viento is aged for 15 months in oak barrels.
